korean beef tacos

Instant Pot Korean Beef Tacos

INGREDIENTS

For the Korean Beef:

  • 14ounce can pears, drained (fresh pears work, too)
  • 1 two-inch knob of fresh ginger
  • 4 cloves garlic
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tsp sesame oil
  • 2 lbs. top sirloin (see notes)
For the Tacos:
  • chopped cilantro
  • chopped peanuts
  • kimchi !!!! or slaw of some sort
  • sriracha mayo or yum yum sauce
  • flour tortillas

INSTRUCTIONS

  1. Make the sauce: Pulse pears, ginger, garlic, soy sauce, sesame oil, and brown sugar until mostly smooth. Reserve half for later use (see notes).
  2. Cook the meat: Trim any fat off the meat and cut into a few large chunks (it will shred, but cutting the meat helps it cook faster). Place in an Instant Pot and cover with half of the sauce. Cook on high pressure (manual) for 45 minutes. Release steam and shred the meat in the Instant Pot with two forks. I cooked this in a crock pot for on high for 5 hours.
  3. Tacos: Fill each tortilla with beef, cilantro, peanuts, kimchi, and spicy mayo. Oh.My.Gosh. It’s so good.

MeatLoaf

Adapted from Pioneer Woman

This meatloaf is delicious, moist, flavorful and it's husband, brother, and dad approved:)

2 lbs ground beef (I do half ground turkey)
1 C. Milk
6 slices bread
1 C. gated Parmesan cheese
1 tsp salt
1/4 seasoned salt
1/4 C. minced flat leaf parsley
4 eggs
8-12 slices of bacon
*I add a minced onion
*I also add 1 c. finely chopped spinach 

Tomato Sauce

1/2 C ketchup
6 Tbs brown sugar
1 tsp ground mustard
2 dashed worcestershire sauce
2 dashed franks hot sauce (I put a good 6)

Directions:

For meatloaf: preheat oven at 350*. pour milk over bread and allow to soak for several minute. combine the rest of ingredients in large mixing bowl. Form the mixture into a laof on a broil pan. Lay the bacon slices over the top, tucking it underneath the meatloaf to give the meatloaf some support. Next make the tomato sauce- mix all ingredients in a bowl. Pour a 1/3 of sauce onto loaf and bake meatloaf for 45 min. and then pour another 1/3 on top of loaf. Bake for 20-25 min. The meatloaf should not be pink in middle. Allow to sit for 10 minutes before serving.

Shephards Pie

This dish is turning into a family favorite and it's even better the second day. As I mention below it needs a lot of salt and pepper!
Ingredients

2 pounds potatoes, peeled and cubed
3 TBS softened cream cheese
1/2 cup milk, 
Salt and freshly ground black pepper ( this dish needs a lot of salt and pepper)
1 3/4 pounds ground beef, ground lamb or ground turkey
2 carrot, peeled and chopped
1 onion, chopped
 4 tablespoons butter
4 tablespoons all-purpose flour
  2 cup beef stock or broth
2 TBS Worcestershire
1/2 cup frozen peas
 1 teaspoon sweet paprika
2 tablespoons chopped fresh parsley leaves

Directions

Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine  cream cheese, and Milk. Add the cream mixture into potatoes and mash until potatoes are almost smooth.

While potatoes boil, preheat a large skillet over medium high heat. Add beef to hot pan and Season meat with salt and pepper. Brown and crumble meat 5 minutes. Drain all drippings and return to pan.  Add chopped carrot and onion to the meat. Cook veggies with meat 10 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. Whisk in broth and Worcestershire sauce. Thicken gravy 1 minute. Add gravy to meat and vegetables. Stir in peas.

Preheat broiler to high. Fill a small rectangular casserole with meat and vegetable mixture. Spoon potatoes over meat evenly. Top potatoes with paprika and broil 6 to 8 inches from the heat until potatoes are evenly browned. Top casserole dish with chopped parsley and serve.

Stroganoff Sandwich

Lovingly called "the loaf." this is something my mom cooked when she had to take a meal to a friend. It's different, easy and oh so good !

1 loaf unsliced french bread
1 lb ground beef
1/4 C. chopped green onion
1 c sour cream
1 TBSP milk
1 tsp Worcestershire Sauce
1/8 tsp garlic salt
3/4 tsp salt
2 tomatoes, sliced or diced
1 green pepper, sliced or diced
1/2 c shredded cheese


Cut loaf in half lengthwise. Brown meat and onion. Drain off fat. Stir in sour cream, milk, Worcestershire Sauce, garlic salt and salt. Do not boil. Spread each loaf with 1/2 of the meat mixture. Arrange tomatoes and green pepper slices (or pieces) on top of meat. Sprinkle with cheese. Place on a cookie sheet and bake at 375 degrees fro 5-10 minutes or until warmed thoroughly.
